I'm on a pretty low calorie diet, and something I've found that is really useful as a snack is cucumbers. Basically zero calories but kind of bland alone, I've noticed that by adding an acid, an oil, and a salt, you can make a lot of different flavors.

For Asian inspired ones I use lime juice or rice vinegar, sesame or vegetable oil, soy sauce or fish sauce. I can also use olive oil, balsamic vinegar, malt vinegar, all kinds of good stuff. You can add chili flakes to all these for a spicy pickle too.

It's fun to experiment because it's hard to make something that tastes bad, even just eyeballing the ratios, and a cucumber is only like 50 cents and everything else is stuff we had in the pantry so there's no real monetary risk either.
