I harvested my Thai birds eye chilis and had a pack of sweet mini peppers I needed to use up so I seeded the peppers, pounded them into a paste, and tada! Sambal!
I also got a FUCK TON of Thai birds eye chilis seeds. Holy cow so many. My hands are on fire from seeding them haha! Quick tip if you ever have to seed a bunch of tiny peppers: put them in a big bowl of water and rub them between your fingers in the water. The seeds should come out pretty easy and if they don't, you can break the pepper in half and THEN they'll come out.
Also this sauce is like mega spicy. I need to decide what to do with it. It's a really simple sauce with just chilis, salt, and vinegar. So I'll probably just add it to random stuff until I run out haha
