I was in that CLASSIC position that we all regularly find ourselves in where I had salmon that I had cured with salt and sugar in my fridge and I needed to use it up ASAP. AND I had just made a homemade batch of furikake. So obviously, I made okonomiyaki!
It's basically a Japanese dinner pancake where you mix whatever random stuff you have in the fridge together into a batter and cover it with whatever random sauces and toppings you have. Super easy and fun to make. You'll see recipes talking about "authentic" okonomiyaki, and while yeah there's absolutely versions you're likely to see at fairs or restaurants in Japan, it's supposed to be a leftovers dish. The only required item (besides the batter) is shredded cabbage, which is important structurally and texturally.
