I realized it'd somehow been like two years since I last made my favorite food (curry rice) and having it again is so good. I tried a new box brand (Vermont curry) and while I don't think it's my favorite, it's definitely really good.

during pandemic I learned to do the curry in an instant pot. half Golden Extra Hot, half Java Hot
but I have almost no tolerance for sweetness in curry
Java is my favorite box brand but I wanted to try something new. Vermont's definitely a sweet curry, but less so than I expected.
yeah they're not fucking around about those apples. I recall Kokumaro being quite sweet as well - Golden I like mainly because they have the extra hot variety
EDIT: but yeah it's wild how, like, rich and complex the flavor is. why can't we get prefab roux of other varieties??
Kokumaro is the other box I bought to try. I have no idea what to expect from it.
Golden was the only brand I could find locally, and they stopped selling it before the pandemic, which was the onus for me to get some online.
