I made homemade chicken broth! Turns out the best way to use up a leftover Costco rotisserie chicken is to shove the picked carcass in a pot with a charred onion and just boil it for a few hours. Best chicken stock I've ever made.
So many classical Western chefs insist that you must only barely simmer a stock for hours and hours and hours and I am here to tell you that I'm starting to think they might be full of shit. I have been trying to make stock for years and invariably if I do it their way, I get ... water. Not even flavored water, just nothing. The shit that has been good has always been boiled, or made in a pressure cooker ... ie. boiled under pressure. You need the damn heat to get all the goodies out.
