No pics because my dad already cut up the chickens by the time I made it to the kitchen but I made two cornish hens for dinner and I honestly think they turned out perfect πŸ™
Oven at 350. Tossed them in the roasting pan with some chicken seasoning. 1/2 inch ish of water in the bottom of the pan, lid on, and in the oven for about an hour. They were temping at 145. Took the lid off and they took about another hour to get to 165. I could have been a little generous with the seasoning imo, but it is the perfect level of moist. I just sprinkled some extra seasoning on mine (I think I was craving salt lol).
Going to save the carcasses and whatever leftovers don't get eaten by Wednesday will become soup 🍲
