one of the things im gonna have to work on now that i've been laid off and have more time and less money is food, so if anyone has recipes they really like that aren't too labor intensive or expensive i'd love to hear about them. special shout outs to stuff that reheats easy.

Chicken salad is bomb you can make enough for like a whole week with one grocery store rotisserie chicken. I do a lot of eyeballing but i mostly copy this one.

Rotisserie Chicken breast and thighs shredded
4 Celery stalks, blanched and diced
3-4 Roughly chopped green onions
2 Tablespoons of Paprika
1 Teaspoon of Chili Powder
2 Teaspoons of Garlic Powder
3 Tablespoons of Relish
1 Cup of Mayo
2 Teaspoons of Sriracha/Tabasco

Costs less than $10 and goes great on croissants

one of my go-to comfort meals is 1/3 cup dry lentils + 1/3 cup rice or 2/3 cup pasta + whatever frozen veggies are cheap + 1tbsp soy sauce + 1tbsp brown sugar (and/or any other seasonings or flavors you like), all in a pot, boil stirring occasionally until the lentils and rice/pasta are tender (usually about 20 minutes for me). filling, nutritious, cheap, can do on 1 brain cell, none of the ingredients spoil easily, and pretty tasty!

I'm a big fan of fried rice. Just make some rice in a rice cooker, then toss it in a pan with soy sauce and whatever veggies you've got on hand. Onions are always good, but you can add whatever you want depending on how much energy you have for chopping stuff
