May I suggest an alternate pepper method?
Make a circular cut around the stem, this should then, perhaps with some twisting and wiggling, let you pull out the stem with the core and seeds attached. From there, you can cut the pepper in half lengthwise, slice into strips, then dice the strips.
i do almost this! i cut into (not through) the pepper at the base of the stem, and go all the way around back to the other side of the stem. then i pull the two halves and core it. then i pound the halves flat so i can slice them nice!
