I was not sure if we had any eggs in the house and it turns out we DO have like 3 left but they're from AUGUST. I did the water-float test on them and one of them floated, the other two stood on the pointy end at the bottom of the cup. Apparently standing on the pointy end means "not as fresh, but still good to eat." and since I wasn't making like Scrambled Eggs or anything I figured an old egg wouldn't be the end of the world. Also it is going to be cooked at 400°F so I imagine that would kill anything unpleasant. I still may die but if it's for a peanut butter cookie that'll be fine.

But yeah these were pretty good for being dead simple and only 3 ingredients. They did not come out looking like the pictures in the book, but does anything, ever? Maybe if id squished down the balls of dough a little they would've come out more flat, but as it stands they were very Round cookies that did not spread out very much. As part of that they also took a little longer to cook - at 10 minutes they did not look done, so they ended up going for 15 minutes.
I used Peter Pan peanut butter for what it's worth, maybe the results change with different brands. I wanted to try some JIF peanut butter I had that has honey in it, but it also said it was "low sodium" and I worried the amount of salt in regular peanut butter was a part of the "magic" of these cookies so I went with the regular stuff. Measuring out exactly a cup of peanut butter is an... interesting challenge, haha.
It was very surreal dumping a huge glob of peanut butter, an absurd amount of sugar, and a single egg into a bowl, churning it around uselessly for a few minutes, and then watching it spontaneously take on the complete and full texture of cookie dough. Absolutely dark magic bullshit.
The cookies themselves are definitely on the soft side, and a little on the dry side - I wonder if that has more to do with my extended bake time than the recipe though. Very thick and peanut buttery, you very much feel like you're eating Solid, Crumbly Peanut Butter, which is good and should be expected from a recipe that is 2/3 peanut butter.
The cookbook has some other dead simples cookies, such as Hello Dollies and Starchies that I'll probably try sometime soon.
