OK so to clarify here because it seems the commenters are also confused: You don't eat koji. It's more an ingredient, than a foodstuff itself, like yeast. It's used to provide the live culture for a number of things like miso, sake, I think some kinds of soy sauce, and other fermented things.

There's a really fun manga called Moysasimon: Tales of Agriculture which centers a lot around agricultural microbiology and the main character is accompanied by a big happy koji mold cell because he grew up around a sake brewery. It's really cute.
