I love this shit so much, it's become one of my favorite easy recipes, though this is a little higher effort version. I put this on the menu at the Rest because it seemed like the kind of thing Anna could throw together quickly while being solo behind the counter.
Cooked noodles tossed with sauce of chili crisp, peanut or sesame paste (I just use chunky peanut butter, natural if I can get it), light & dark soy, black vinegar, sesame oil, salt, sugar, and a pinch of MSG. Garnished with pickled mustard green, some kind of minced pork (in this case some chopped and marinated bacon), scallions, and I like to add a little thinly sliced red onion lately.
Traditionally, none of this would even be mixed by the server, you just put all the sauce components in the bottom, then the noodles, and then the garnishes on top, and the diner would stir it all together. I like to do the sauce part in the pan though, with a little smattering of the water from cooking the noodles, I think it's easier to get a nice creamy texture.
So fucking good I'd punch a horse for a bowl.
