Step one for cooking: Fry some onion in butter. Step two: Figure out what the hell you're going to do for the rest of the ingredients.
...There was a lot of butter and wine involved in this. And a lot of onion.
I am somewhat drunk.
oh, yeah, so: Sweet potato (several), parsnip, onion (4, in total), and a butternut squash.
There wasn't enough of a process to give a recipe, I just started with cutting everything into chunks while two of the onions were becoming goop, then when the whole mess got put in the oven with some honey, more butter, and a healthy splash of wine (one glug for the food, one glug for me!)
Then while it was in the oven I got bored, and reduced two more onions to goop, and the remaining 3 sweet potatoes that didn't fit in the roasting tin got sliced real thin like and butter-fried along with the goop-onions and more wine and butter, and dolloped on top once I took the roasting tin out.
Serves: Several, maybe. Or one, for a couple of days.
