speaking of which, I am surprised itch has been around for 10 years and there is no way to organise your home page beyond laying everything out in a grid. I want to draw attention to some things over others, I want to feel like I can release something that took me 5 minutes and something that took me 5 years on the same page and not have them displayed next to eachother as equally representative of me

As for this exact dev page example, I haven't seen a guide, but I think you need to hide all games first on your dev page, and then show only your custom lists with some custom css code for them to not look like default itch lists.
