as someone who only had the regular 64 controllers, why were manufacturers so hopped up on making an already dogshit controller worse by shaving off the handles?

Handles were a controversial technology. The various Saturn controllers had no handles, neither did the SNES' Dogbone controller, and the PlayStation controller almost didn't have any.
