watched a video on the production of katsuobushi and no matter what stage of the process you are at its gotta smell fucking crazy in there
there's a point where after the cutting, boiling, de-boning, steaming, and de-boning 2 they make a fish putty from other parts of the tuna to patch up cracks and whatnot before it goes though the smoking/aging process. the machine used to mash the various bits up looks like one of the most mangling devices there in a factory full of incredible sharp motorized instruments.
