These glass noodles are normally a clay pot dish but I don't have one.
The noodles are very light. Since they're saturated with sauce, the rice offers a flavor break and also makes the dish more filling.

I made this red curry before and it's still delicious.
I also braised the extra bamboo shoots that I didn't use in the curry. Which, normally you would cut into wide thin slices. But I had pre-sliced bamboo shoots.
