i splurged on clover food lab's blueberry celebration box and made the included blueberry salad for dinner tonight! this is a big deal because i am generally a Salad Disliker. i'll eat one, i just won't really enjoy it, so i rarely attempt one at home (hence why i'm not practiced at Salad Photography). but this one sounded enticing - and i really wanted the other blueberry treats in the box lol - so i decided to give it a whirl!

the components of the salad:

  • mixed greens
  • blueberries
  • roasted corn
  • roasted pecans
  • goat cheese
  • white balsamic dressing

it was... fine! it didn't give me the great Salad Awakening i'm waiting for. i liked almost all of the individual components, and they were all fresh and delicious! i just think i have a hard time with individual components coming together as they do in a salad. if any of you Salad Enjoyers have tips, please share!

feta and sliced almonds sounds lovely! and omg if a lot of cheese is what it takes to get me eating salads consistently, i'll take it! mainly i just want a better vehicle for getting vegetables and whatnot into my daily eats, which i'm currently very bad at :eggbug-sob:

yeah for me feta is nice because it gets you salt and tang quickly

paired with a smidge of olive oil and black pepper

i also love to add tomatoes... and salting your tomatoes is huge. though I wouldn't do that if you're also using feta.

or for something easy get pecorino romano and grate that my god its so good

yeah, i don't really enjoy most salad dressings either! i try to think about how it's ~balancing out the flavors~ or something culinary like that but it doesn't tend to work on my brain lol
