This is the first soup recipe I've tried from @whit but definitely not the last because holy shit goddamn. This is good soup! The balance between sweet, tart, and savory is so perfect. It was surprisingly filling, too. I wasn't feeling great1 so this is the only meal I've had today and I still almost felt too full to finish my bowl.
Notes:
- I intended to make this with pink lady apples but apparently did not pay enough attention at the store because the stickers said honeycrisp. Oops. It was still delicious.
- I added more carrots and potatoes, and doubled the thyme in the dumplings because I just really like those things a lot.
- My cheese didn't melt very pretty because I used pre-shredded cheese. It still tasted great, but if I was trying to impress someone with this soup in the future (and I probably will be lol) it'd look nicer if I grated it myself.
