Made some stuff that needed to get eaten tonight, and made the following and it is fucking BOMB. I keep meaning to make @whit's October soup so I've got soup on the brain!! But I made this cuz it's what we had!!!!
Edit: Includes kale, meatballs, beans, onion, garlic, broth, marsala, and provolone. Recipe below the cut:
- Bunch kale, chopped and lightly salted/mixed up
- Beans in broth (maybe 2c? I had some alubia blancas with oregano that I made for Erika for while I was gone)
- 16oz pre cooked chicken meatballs, these were TJs
- Garlic, a tablespoon or two, ~minced (we use jar garlic)
- 1/2 an onion, chopped
- Red wine for cooking
- Better than bouillon or whatever broth you have
- Provolone
- Use a good stock pot:
- Halve and sear and salt chicken meatballs, remove
- Fry chopped onions in the same pot. A little salt here too. Let em fry for a while on highish, til some sides are browned. Don't stir too much. Maybe 5m this part.
- Add a big lump of garlic. I used the jar stuff ("jar gar" around our house). It will scream a little
- After maybe 45-60 seconds of that, dump a glug of the cooking wine in there. It will scream more! Scrape up all the stuff. Leave it all in there.
- Add 6c broth and the beans. Bring to boil, then reduce heat to low and simmer for 10m.
- Put chopped kale and the meatballs back in, cook another minute or so - doesn't need much time.
- Turn the heat off and add another dash of acid: either more cooking wine or a hearty squeeze of any citrus (less if it's from a jar).
- Serve, and after plating (bowling? 🎳) , put a slice of provolone on top!!!! Watch it melt! Then you eat it!!!!!!!
Makes like... 3.5 servings? Another bunch of kale and another 2c of broth would be solidly 4 servings. As it was, we ate all the kale in the first two bowls because one bunch of kale ain't no more than two servings!!
