On the metal exploration front, I've recently stumbled across a band I'd heard of but never listened to, because how do you not remember an amazing band name like High On Fire, and now I can't stop listening to their 2007 Death Is This Communion. Harsh vox, huge sound, not too long but each song takes its time. Feels sooooo good in my ears

Yoo, that album was also my intro to High on Fire! It's so heavy, and I think it was one of the albums that served to get me into more doomy metal. It's hard to think back to that time, but this album was definitely a mainstay for me circa 2010 or 11.

Well, as for High on Fire albums, I never found I liked the others as much as DitC. That's not to say they're bad, but that album was kind of the peak for me. Blessed Black Wings probably takes second place though.

This question has got me looking through my old music library, realizing it's been ages since I found a new doom metal band. But here's some old favorites:
Dark Castle - Spirited Migration I was entranced by this album, it's got so many layers. And shockingly, it is only two people. Bonus points for lady vocalist.
Deadbird - Twilight Ritual No idea what this band did after this, but this album is pretty cool. Heavy, dirty sound interspersed with some quiet moments.
Sleep - Sleep's Holy Mountain Classic stoner band. A little bit funky, just kind of fun to listen to. Not as aggressive as more recent bands.
Gojira - From Mars to Sirius Not really considered a doom band per se, but I think this album is very doom-adjacent, if a bit fast. It's exceptionally heavy, and keeps doing novel things throughout. I come back to this album all the time.
Boris - Amplifier Worship Do not actually listen to this album lmao. Egregiously sludgy, experimental noise metal. I saw it in my library and couldn't not mention it though. Who knows, you might like it 🤷‍♀️

I don't normally album dump on people, but I hope you find something you like in there! You've made me realize that I seriously need to find some new doom bands.
