Full disclosure: there's quite a number of games I've considered trying to 100%! Not as if I'm not tempted. Just, when the time actually comes to decide "do I want to spend 5-40 hours on the unfun part of the game, or do something else?" I consistently pick doing something else.
Plenty of games have grabbed my hyperfixation but when I hit the ~80% cheevo point and find out that for example I need to catch five rare events in counterfeit Pokemon Snap to complete the monster action combat game... I refuse to dive into Egg Delivery.
I'm gonna agree with you, citing my love for Celeste. I love how all of its achievements are tied to content it encourages you to do already, but crazy shit like the deathless berries aren't. Feels a lot healthier.

Yeah, 90% of my 100% games are VNs for this reason. If there's "hard" achievements it's tied to finding more things to read and I am reading all the things anyway.

Oh that's a mood– and actually something VS has in common with your 100% VNs: it's very much set up such that the "hard" achievements boil down to "keep playing and doing what you were doing!" I hit reddit for a few guides once I was nearing the end but was consistently amused to see how little I needed them.
