Oh yo! I've never actually seen the color e-ink with my eyes before, that's rad!
Color isn't the most vibrant, but it's accurate enough and honestly it's super cool to see color on e-ink at all, ahah! Good stuff!
Yeah, it needs a bit of a contrast and saturation boost to the source image to stop things ending up a bit too green - but the getting started guide suggests doing that, so it's not like it comes out of nowhere.
