I'm sure it's wildly contingent on who follows you, but speaking as someone who (a) is on cohost all hours and (b) has close to zero overlap between chosties and people I know IRL, my experience has been that likes and shares get a lot quieter after midnight (Eastern Time, UTC−05:00) and it stays that way until things start to pick up again about eight hours later.
What this implies in terms of boosting things isn't obvious to me. Depending how many followers one has (and when they're active, and who they're following), boosting during a high traffic time may be the best way to get eyeballs on something, but might also be the time when the post is most likely to get buried.
