For me there isn’t much in the way of “lore”. Hmm…

I guess if I were to create lore, Amaya would probably discover her taur form as some sort of mishap that occurred during her magical studies. In a way she discovered what being a taur was like and found it so comfortable that she kept that taurification spell handy.

Another idea is that she already had that affinity for taurkind and one day she managed to unlock something deep within her that either permanently turned her into a taur, or allowed her to change between her anthro and taur forms like a weretaur or a shapeshifter. Maybe discovering she was trans brought that out.
