chop up your parsley and chives into very small bits. "how much parsley and chives" i dont know. i just winged it. try like, idk, a tablespoon (chopped) per potato? if you have garlic, chop it into very small bits as well. i got garlic that was already granulated from costco
put your butter in a bowl. mash all the parsley, chives, and garlic into the butter. mix it up. you can add some other herbs and spices too. might be good to add things like: a little chili powder, paprika, thyme, some black pepper, whatever. i think the parsley and chive is good and simple but you can make it crazy. if you want.
put the herb butter in some plastic wrap and roll it into a log that's about.... 1.5-2 inches thick. like the diameter of a banana maybe
throw that herb butter log in the fridge for now
scrub your potatoes good
cut a slice off the long side of the potato so it lays flat without rolling about
put the potato between two chopsticks and cut down. the chopsticks prevent you from cutting all the way through, giving you cuts at the perfect depth. make slices of potato that are like 1 quarter of an inch apart, through the whole potato
put the potato(es) on parchment paper on a baking tray, add a thin layer of oil around the whole potato if you want. not required but i think its good. please make sure you use a baking TRAY instead of a baking SHEET or else melted better will drip all down in your shit
the slices of potato aren't going to want to separate right now. thats ok. they will.
put the potatoes in the oven for 30 minutes
after 30 minutes, take the potatoes out.
also take your butter out of the fridge. it should be solid enough right now
slice the butter into little coin-sized pieces
use a fork to separate the slices of the potato one at a time, and put a coin of herb butter between each one
once every slice has some herb butter (which will have already started melting all over - dont worry, that butter is just to make it easy to get the herbs in there) throw those potatoes back in the oven for another 30 minutes. might take 40 minutes if you got FAT potatoes like i did
take them out and let them cool for 5 minutes. hot potato
put sour cream on them and eat it with a fork or your fingers
you might even add some cheese or something to the top in the last 5 minutes of oven baking. i didnt but you might.
